This is powerful and full bodied, but the crackling acidity tightens its waist. The flavors of fresh quince, crunchy apricot, honeysuckle, lanolin and ginger are subtle today, but should become more expressive with time. The finish features a tactile mineral element and it's salty even. This is a great food wine, especially for pork or sausage.
