The NV Extra Brut Clarevallis, made from 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay and 5% Blanc Vrai (the local name for Pinot Blanc), references the Latin name of Clairvaux, because Drappier occupies the ancient cellars once constructed for that influential abbey. This wine is from organically farmed estate fruit only. The wine is golden in color, almost with a tinge of pink. The nose is vivid with juicy Mirabelle plum and ripe apples. The palate takes this fruit, backs it with yeasty brioche bun and white pepper and suffuses it with lively, youthful mousse. A phenolic edge on the finish also pays testament to the strong Pinot identity of this wine.
